Russian   -   Georgian Cheese Pies   adapted from Please to the Table

  • 1 Package Pizza Dough
  • 2 Cups Chevre Cheese -- crumbled
  • 2 Cups Farmers Cheese -- crumbled
  • 6 Tablespoons Butter
  • Salt -- to taste
  • 1 Teaspoon Cilantro -- finely chopped
Directions Divide dough into 4 pieces. Roll out one piece into a boat shape about 8 inches long and 5 inches wide in the middle. Combine the remaining ingredients in a bowl. Take 1/4 of this mixture and place it in the middle of the boat shaped dough leaving a 1 inch border all around. Bring the edges of it in to create a standing border. Pinch the two long ends together. Transfer to a baking sheet. Repeat procedure until you have 4 boats. Preheat oven to 500 degrees. Bake the pies until the crust is a golden brown and the cheese is bubbling about 12 minutes.
