Russian   -   Meatballs In A Pomegranate Sauce   adapted from Please to the Table

  • 3/4 Pound Ground Beef
  • 1/2 Pound Ground Lamb
  • 1 Medium Onion -- grated
  • 1 Large Egg -- lightly beaten
  • 2 Tablespoons Ice Water
  • 1/4 Cup Dry Bread Crumbs
  • 1/4 Teaspoon Ground Allspice
  • 1/4 Teaspoon Paprika
  • 1 Teaspoon Dried Mint
  • Salt And Pepper -- to taste
  • 1/4 Cup All-Purpose Flour
  • 5 Tablespoons Unsalted Butter
  • 1/3 Cup Beef Stock
  • 1 1/2 Cups Pomegranate Juice
  • Salt And Pepper -- to taste
  • 1/4 Cup Pomegranate Seeds
  • 1/4 Cup Fresh Mint -- finely chopped
Directions Combine beef, lamb, onion, egg, ice water, bread crumbs, allspice, paprika, mint, salt and pepper in a large bowl. Cover and refrigerate for 20 minutes. Shape meatballs into the shape of walnuts. Spread flour on a plate and roll meatballs in it. Melt butter in skillet. Add meatballs and cook until browned on all sides about 15 minutes. Remove from skillet and set aside. Pour the stock and pomegranate juice into the skillet and turn heat to high. Scrape the bottom of the pan and let the liquid boil for about 5 minutes. Season with salt and pepper, then add the browned meatballs and pomegranate seeds. Reduce heat to low, cover and let simmer for 15 minutes. Garnish with mint and serve over rice.
