Russian   -   Moldavian Fish And Red Pepper   adapted from Please to the Table

Ingredients
  • 2 Pounds Fish Fillets
  • Salt And Pepper -- to taste
  • 6 Tablespoons Olive Oil
  • 1 Lemon Lemon Juice
  • 2 Teaspoons Chives -- finely chopped
  • 1 Small Red Bell Pepper -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 2 Small Leeks -- finely chopped
  • 8 Large Mushrooms -- chopped
  • 5 Large Tomatoes -- chopped
  • 1 Cup Dry White Wine
  • 1/4 Cup Parsley -- chopped
  • 2 Tablespoons Dill -- chopped
  • 1/2 Tablespoon Crushed Red Pepper
  • 1 Cup Feta Cheese -- crumbled
Directions Rub fish with salt and pepper. Place in large baking dish.
Combine 3 tabs olive oil, lemon juice and chives, pour over fish and marinate 30 minutes. Place bell pepper and garlic in food processor process to paste, set aside. Heat remaining oil in skillet, saute leeks and mushrooms 15 minutes. Add tomatoes, wine and paste, satue 15 minutes. Preheat oven to 375*. Top fish with mixture. Sprinkle with parsley, dill and red pepper flakes, bake 15 minutes. Sprinkle with feta, return to oven another 10 minutes.
