Ingredients
  • 2 Pounds Portobello Mushrooms -- chopped
  • 5 Tablespoons Olive Oil
  • 1 Lem Lemon Juice
  • 1 Large Onion -- chopped
  • 1 Medium Red Bell Pepper -- chopped
  • 3 Large Tomatoes -- chopped
  • 3 Cloves Garlic
  • 1 Teaspoon Paprika
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Fennel Seed -- ground
  • 2 Teaspoons Flour
  • 1 Cup Dry White Wine
  • Salt And Pepper -- to taste
  • 3 Tablespoons Parsley -- finely chopped
  • Parmesan Cheese -- to taste
Directions Saute mushromoms in oil 7 minutes.
Add lemon juice, remove and set aside.
In the oil and lemon juice mixture, saute onion and bell pepper 8 minutes.
Add tomatoes, garlic, spices, cook 4 minutes.
Add flour then wine, stir add alt and pepper.
Reduce heat, cover simmer 15 inutes.Add mushrooms cover and simmer 10 minutes. Sprinkle with parsley, parmesan and serve.
Serves 6
