Russian   -   Red Beans With Walnut Sauce (Georgia)   adapted from Please to the Table

  • 1 Cup Kidney Beans
  • 1 Medium Red Onion -- finely chopped
  • 1 Cup Walnuts -- ground
  • 4 Cloves Garlic -- finely chopped
  • 1/2 Cup Cilantro -- finely chopped
  • 1/2 Teaspoon Coriander Seed -- ground
  • 3 Tablespoons Red Wine Vinegar
  • 1 Tablespoon Water
  • 2 Tablespoons Olive Oil
  • Cayenne -- to taste
  • Salt -- to taste
  • Cilantro -- for garnish
Directions Mash the beans lightly with wooden spoon. Add onion, walnuts, garlic, cilantro, coriander, vinegar, water and oil. Mix well ans season with cayenne and salt. Cover and refrigerate for 6 hours. Serve garnished with cilantro and pita triangles.
