Russian   -   Russian Hamburgers   adapted from Please to the Table

  • 2 Slices White Bread
  • 1/4 Cup Milk
  • 1 Pound Ground Beef
  • 1 Medium Onion -- grated
  • 1 Clove Garlic -- finely chopped
  • 1/3 Cup Ice Water
  • 1 Large Egg -- separated
  • 2 Tablespoons Parsley -- finely chopped
  • 2 Tablespoons Dill -- finely chopped
  • Salt And Pepper -- to taste
  • Dry Bread Crumbs
  • 3 Tablespoons Olive Oil
  • 3 Tablespoons Unsalted Butter
Directions Soak bread in milk for 10 minutes. Squeeze the bread to remove and excess milk and crumble it into a large bowl. Discard milk. Add beef to the bread along with the onion, garlic, ice water and egg yolk. Mix well. Beat egg white until frothy. Carefully add it to the meat mixture along with herbs, salt and pepper. Knead until thoroughly blended and fluffy. Form mixture into oval patties abut 3 inches long. Place bread crumbs on a plate. Roll patties in the crumbs. In large skillet heat oil and butter, fry patties until done.
