Russian - Russian Tomato Stew

Ingredients

- 1 Tablespoon Olive Oil
- 2 Pounds Chicken -- cubed
- 2 Medium Onions -- chopped
- 3 Cups Roma Tomato -- chopped
- 3 Large Potatoes -- peeled and cubed
- Salt And Pepper -- to taste
- 1 Bunch Fresh Cilantro -- chopped
- 1 Bunch Fresh Parsley -- chopped
- 5 Large Basil Leaves -- chopped
- 8 Cloves Garlic -- finely chopped

Directions
|
Saute chicken in very hot oil for 10 minutes. Add onions and saute until soft. Add tomatoes, potatoes, salt & pepper. Cover, simmer over low heat 30 minutes. Uncover, return to rolling simmer. Stir in remaining ingredients. Cook 10 minutes, sitrring constantly. Let stand 5 minutes before serving.
