Russian   -   Southern Sauce   adapted from Please to the Table

  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- finely chopped
  • 6 Ounces Tomato Paste
  • 1 1/4 Cups Chicken Stock
  • 6 Cloves Garlic -- finely chopped
  • 1 Teaspoon Paprika
  • 1/2 Teaspoon Crushed Red Pepper
  • 1 Tablespoon Red Wine Vinegar
  • 1/8 Teaspoon Sugar
  • Salt -- to taste
  • 1/4 Cup Parsley -- finely chopped
  • 1/4 Cup Cilantro -- finely chopped
Directions Heat oil in a skillet, add onion and saute for 10 minutes. Add tomato paste and stock and stir until well blended. Bring to a boil then reduce the heat to low. Add garlic, paprika, red pepper, vinegar, sugar and salt and simmer for 4 minutes. Taste and add more sugar or red pepper as needed. Remove from heat and stir in the herbs. Let cool to room temperature. The sauce will keep for 5 days.
