Ingredients
  • 8 Cups Water
  • 1 Pound Beef -- cubed
  • 1 Medium Zucchini -- cubed
  • 1 Medium Carrot -- sliced
  • 1 Medium Turnip -- cubed
  • 1 Large Onion -- finely chopped
  • 1 Medium Green Pepper -- finely chopped
  • 2 Medium Potatoes -- cubed
  • 1/2 Cup Chickpeas -- cooked
  • 4 Cloves Garlic -- finely chopped
  • 1/2 Cup Tomato Juice
  • 1 Teaspoon Salt
  • 1 Teaspoon Cumin
  • 1 Pound Spaghetti -- cooked
  • 3 Medium Scallion -- thinly sliced
  • 1/4 Cup Cilantro -- finely chopped
  • 3 Tablespoons Mint -- finely chopped
Directions Put all ingredients in the pan except spaghetti, scallions, cilantro and mint. Bring to a boil, reduce heat to low, cover and simmer for 1 hour. To serve place noodle in soup bowl and cover with broth. Sprinkle with scallion, cilantro and mint. Serve.
