Ingredients
  • 3 Large Beets -- Cooked And Chopped
  • 2 Tablespoons Butter
  • 2 Large Onion -- Chopped
  • 4 Cloves Garlic -- Chopped
  • 2 Medium Carrot -- Chopped
  • 1 Medium Parsnip -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 4 Cups Chicken Stock
  • 2 Tablespoons Honey
  • 1/2 Cup Dill -- Chopped
  • 2 Medium Bay Leaf
  • 1 Teaspoon Oregano
  • 1 Teaspoon Basil
  • 1 Teaspoon Salt
  • 1 Small Cabbage -- Shredded
  • 12 Small New Potatoes -- Boiled
  • Sour Cream -- To Taste
Directions Saute onions in butter for 5 minutes. Add garlic, carrots and parsnip. Saute for 6 minutes. Add tomatoes, stock, honey, dill, bay leaves, oregano, basil and salt. Simmer for 40 minutes. Add beets and cabbage. Simmer for 20 minutes. Add potatoes and serve topped with sour cream.
