Scottish   -   Bannocks (Scotland)   adapted from Kitchen Witch's Cookbook

  • 2 Cups Milk -- hot
  • 1 1/2 Cups Instant Oatmeal
  • 1 Medium Egg
  • 1/2 Teaspoon Baking Soda
  • 1 Tablespoon Orange Peel -- grated
  • 1 Tablespoon Almonds -- chopped
Directions In a large bowl, pour the milk over the oatmeal, let it sit for 10 minutes. Beat in the egg, baking soda, orange peel and almonds. the consistancy should be like a thick pancake batter. If the consistancy is not right add milk or oatmeal. Grease griddle and heat over moderate flame. Pour the batter on the griddle, cook until bubbles form. Flip and cook other side.
