Scottish   -   Game Loaf   adapted from Scots Cooking by Sue Lawrence

  • 1 Whole Bread Loaf
  • 4 Tablespoons Olive Oil
  • 4 Medium Chicken Or Pheasant Breasts -- Chopped
  • 16 Ounces Mushroom -- Sliced
  • 1 Tablespoon Thyme
Directions Cut off one end of the sandwich loaf and pull out the center bread, leaving a thick lining. Saute poultry in oil until well browned. Add mushrooms and saute for 10 minutes longer. Stuff the bread with the poultry mixture. Slice and serve.
