South American   -   Caraotas Negras (Venezuela)   adapted from The Art of South American Cooking

Ingredients
  • 1 Cup Dried Black Beans
  • 1 Large Onion -- chopped
  • 5 Tablespoons Olive Oil
  • 5 Cloves Garlic -- finely chopped
  • 1 Medium Hontaka Chiles -- crushed
  • 2 Teaspoons Cumin
  • Salt -- to taste
Directions Cook the beans in lightly salted water about 1 hour. Drain and set aside. Saute onion in 2 tablespoons of the oil until soft. Add garlic, chiles and cumin. Cook two minutes. Add beans and the remaining oil. Salt to taste and mix well.
Serves 6
