South American - Caraotas Negras (Venezuela)

Ingredients
|
- 1 Cup Dried Black Beans
- 1 Large Onion -- chopped
- 5 Tablespoons Olive Oil
- 5 Cloves Garlic -- finely chopped
- 1 Medium Hontaka Chiles -- crushed
- 2 Teaspoons Cumin
- Salt -- to taste

Directions
|
Cook the beans in lightly salted water about 1 hour. Drain and set aside. Saute onion in 2 tablespoons of the oil until soft. Add garlic, chiles and cumin. Cook two minutes. Add beans and the remaining oil. Salt to taste and mix well.
