South American   -   Chorizo Y Lentijas (Uruguay)   adapted from The Art of South American Cooking

  • 1 Pound Chorizo
  • 1 Cup Lentils -- cooked
  • 1 Medium Onion -- thinly sliced
  • 1 Clove Garlic -- finely chopped
  • 1 Medium Bell Pepper -- finely chopped
  • 2 Medium Tomatoes -- chopped
  • Salt And Pepper -- to taste
Directions Cut sausage into bite-sized coins. Saute in large skillet. When it has surrendered most of the fat. Remove sausage and set aside. Drain all but 2 tablespoons of grease. Saute pepper, lentils, onion and garlic. Cook slowly, stirring occassionly. Cook until lentil mixture turns slightly yellow from the sausage seasonings. Return sausage and remaining ingredients to the pan. Cook until sausage is fully cooked about 18 minutes. Serve.
