South American   -   Garlic Soup (Ecuador)   adapted from hot & spicy latin dishes

  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Butter
  • 10 Cloves Garlic -- finely chopped
  • 1/2 Teaspoon Flour
  • 2 Medium Aji Chiles -- chopped, or jalapeno
  • 1 Quart Chicken Stock
  • Salt And Pepper -- to taste
  • 4 Large Eggs -- beaten
  • 2 Tablespoons Romano Cheese -- grated
  • 1 Tablespoon Parsley -- chopped
Directions In heavy pot, heat oil and melt butter. Saute garlic while quickly stirring in flour. stir until garlic begins to brown. add remaining ingredients, except parsley. Mix well. bring to a boil, reduce the heat to medium. cook for 15 minutes. garnish with parsley.
