South American - Garlic Soup (Ecuador)

Ingredients
|
- 1 Tablespoon Olive Oil
- 2 Tablespoons Butter
- 10 Cloves Garlic -- finely chopped
- 1/2 Teaspoon Flour
- 2 Medium Aji Chiles -- chopped, or jalapeno
- 1 Quart Chicken Stock
- Salt And Pepper -- to taste
- 4 Large Eggs -- beaten
- 2 Tablespoons Romano Cheese -- grated
- 1 Tablespoon Parsley -- chopped

Directions
|
In heavy pot, heat oil and melt butter. Saute garlic while quickly stirring in flour. stir until garlic begins to brown. add remaining ingredients, except parsley. Mix well. bring to a boil, reduce the heat to medium. cook for 15 minutes. garnish with parsley.
