South American   -   Greens With Bacon   adapted from unknown

  • 2 Pounds Collard Greens (Or Kale)
  • 6 Slices Bacon -- cut in 1-inch pieces
  • 1 Clove Garlic
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
Directions Remove stems from greens. Cut leave into 1/2 inch wide strips. Pour boiling water over greens. Let stand 5 minutes. Drain thoroughly. Fry bacon until crisp. remove and reserve. stir garlic and collards into bacon grease. Cook and stir 2 minutes. Cover and cook over low heat until greens are tender (15 minutes). Stir in slat and pepper. Garnish with bacon.
Serves 6
