South American   -   Guiso D Repollo (Bolivia)   adapted from Latin American Cooking

  • 1 Small Cabbage -- shredded
  • 3 Tablespoons Olive Oil
  • 1 Large Onion -- chopped
  • 3 Medium Tomatoes -- chopped
  • 1 Large Jalapeno -- chopped
  • Salt And Pepper -- to taste
  • 1 Tablespoon Tomato Puree
  • 2 Tablespoons Cilantro -- chopped
  • 4 Medium Potatoes -- peeled & cooked
Directions Drop cabbage into large suacepan of boiling salted water. Simmer 5 minutes. Drain thoroughly, set aside.
In skillet, saute onion in oil until soft. Add tomatoes & pepper. Saute 5 minutes. Add seasonings, puree allow to simmer 1 minute. Fold into cabbage, add to potatoes, which are cut into chunks. Cook until just heated through.
Variation: Add 1/2 cup dry white wine when folding into cabbage.
Serves 4
