South American - Ham Empanadas (Venezuela)

Ingredients
|
- 1 Large Onion -- finely chopped
- 2 Tablespoons Olive Oil
- 2 Cloves Garlic
- 3 Medium Poblano Peppers -- finely chopped
- 2/3 Cup Cooked Ham -- diced
- 2 Medium Hard-Boiled Egg -- chopped
- 2 Tablespoons Parmesan Cheese -- grated
- 1 Package Pastry Dough
- 10 Large Pimiento Stuffed Olives -- halved

Directions
|
Saute onion in olive oil until soft. Add garlic and peppers, continue to saute for 2 minutes. Remove from the heat and combine with ham, eggs, and cheese. To make turnovers, roll out dough and cut into 20, 3 inch diameter circles. Place a tablespoon of filling and half an olive on the dough. Fold pastry over to form a half moon. Seal with the tines of a fork and bake at 375 degrees for 25 minutes or until nicely browned.
