South American - Maria's Pork Pastelitos (Columbia)

Ingredients

- 1/4 Pound Pork -- finely chopped
- 2 Medium Carrot -- finely chopped
- 2 Medium Potato -- peeled and cubed
- Oil -- if necessary
- 3 Medium Tomatoes -- finely chopped
- 1 Medium Onion -- finely chopped
- 2 Tablespoons Parsley -- finely chopped
- 2 Tablespoons Cilantro -- finely chopped
- 1 Tablespoon Olive Oil
- 2 Medium Hard-Boiled Egg -- finely chopped
- Salt And Pepper -- to taste
- 1 Package Pastry Dough

Directions

Saute meat, carrots, potatoes in a small amount of oil, until vegetables are tender and the meat no longer pink. In another pan, saute the tomatoes, onions, parlsey and cilantro in 1 tablespoon oil until the onion is soft. Combine the two mixtures and stir in the chopped egg. Add salt and pepper. Roll out the dough and cut out 40 rounds about 2 inches in diameter. Place 2 tablespoons of filling on each of 20 rounds. Cover with the remaining rounds. Seal the edges with a fork. Bake at 450 degrees for 10 minutes or until nicely browned.
