South African   -   Asparagus Bredie   adapted from A Taste of South Africa by Magdaleen van Wyk

  • 2 Tablespoons Olive Oil
  • 2 Medium Onions -- Sliced
  • 3 Cloves Garlic -- Chopped
  • 2 Pounds Meat -- Chicken Or Lamb
  • 1 Cup Stock
  • Salt And Pepper -- To Taste
  • 2 Pounds Asparagus
  • 3 Medium Pototes -- Sliced
  • 1 Lemon Lemon Juice
Directions saute onions meat and garlic in oil for 10 minutes; add stock, salt and pepper, cover and simmer 10 minutes; add potatoes, cover, simmer 20 mintues; add asparages, cover and simmer 7 minutes, remove from heat, stir in lemon juice, serve over rice.
Serves 8
