South African - Bean And Tomato Bredie (South Africa)

Ingredients

- 2 Medium Onion -- finely chopped
- 2 Cloves Garlic -- finely chopped
- 1 Medium Shallot -- finely chopped
- 1 Teaspoon Ginger -- grated
- 2 Pods Cardamom
- 1 Teaspoon Fennel Seed
- 1 Pinch Chili Powder
- 1 Teaspoon Coriander -- ground
- 1/2 Cup Pinto Beans -- cooked
- 1 Pound Tomatoes -- finely chopped
- 1/2 Pound Potato -- chunked
- 1 Medium Bay Leaf
- 1 Teaspoon Thyme
- 1 Teaspoon Oregano
- 1 Teaspoon Sugar -- optional
- 8 Ounces Red Wine
- 1/2 Cup Raisins, Or Other Dried Fruit -- optional
- 1/2 Cup Stock
- 1 Tablespoon Olive Oil
- Salt And Pepper -- to taste

Directions
|
Saute onions in oil until well browned. Add garlic, shallots, ginger, cardamom, fennel, chili powder and coriander. Cook for 10 minutes, stirring frequently. Now add the beans, tomatoes, potatoes, bay leaf, thyme, oregano, sugar, wine and raisins. Season, cover the pot and cook for 1 1/2 hours. Add stock if needed. Serve.
