South African   -   Creamy Crab And Corn Soup   adapted from South African Gourmet Food and Wine by Rosen & Loon

Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Sticks Celery -- Diced
  • 1 Large Onion -- Chopped
  • 1 Medium Carrot -- Chopped
  • 1 Medium Leek -- Chopped
  • 1 Cup Clam Juice
  • 2 Cups Vegetable Stock
  • 1 Cup Corn
  • 1/2 Cup White Wine
  • 1 Can Cream Corn
  • 8 Ounces Crab Meat
  • 1 Tablespoon Corn Starch
  • Salt And Pepper -- To Taste
  • 2 Medium Green Onions -- Chopped
  • 3 Tablespoons Parsley -- Chopped
Directions Saute in oil, onion, celery, carrot, and leek until light brown. Add clam juice, stock and wine, boil, simmer 30 minutes. Add corn and cream corn, reduce heat, stir in crab meat and corn starch, return to gentle simmer, season with salt and pepper. Garnish with green onion and parsley and serve.
