South African   -   Creamy Paprika Chicken   adapted from Celebrity Cookbook

  • 1 Large Chicken -- In 8 Pieces
  • 1 Large Onion -- Chopped
  • 1 Clove Garlic -- Chopped
  • 3 Large Leeks -- Chopped
  • 1 Can Tomato Paste
  • 1/2 Cup White Wine
  • 1/4 Cup Sour Cream
  • 1 Tablespoon Butter
  • 1 Medium Bay Leaf
  • Parsley -- Chopped
  • 2 Teaspoons Salt
  • 1 Tablespoon Paprika
  • 1 Teaspoon Pepper
Directions Mix tomato paste and wine. Bring to a simmer in a pan. Brown the chicken in oil, add onion and garlic. Saute until onion is golden. Add bay leaf, parsley, salt, paprika and pepper. Saute for 1 minute. Add wine mixture, cover and simmer for 20 minutes. Add leeks and simmer for 20 more minutes. Stir in sour cream off of the heat. Serve, sprinkled with a bit more parsley.
