South African - Creamy Paprika Chicken

Ingredients
|
- 1 Large Chicken -- In 8 Pieces
- 1 Large Onion -- Chopped
- 1 Clove Garlic -- Chopped
- 3 Large Leeks -- Chopped
- 1 Can Tomato Paste
- 1/2 Cup White Wine
- 1/4 Cup Sour Cream
- 1 Tablespoon Butter
- 1 Medium Bay Leaf
- Parsley -- Chopped
- 2 Teaspoons Salt
- 1 Tablespoon Paprika
- 1 Teaspoon Pepper

Directions

Mix tomato paste and wine. Bring to a simmer in a pan. Brown the chicken in oil, add onion and garlic. Saute until onion is golden. Add bay leaf, parsley, salt, paprika and pepper. Saute for 1 minute. Add wine mixture, cover and simmer for 20 minutes. Add leeks and simmer for 20 more minutes. Stir in sour cream off of the heat. Serve, sprinkled with a bit more parsley.
