South African   -   Curried Beans (South Africa) (Kerrieboontjies)   adapted from The African News Cookbook

  • 3 Medium Onion -- thinly sliced
  • 3 Tablespoons Olive Oil
  • 2 Pounds Lamb -- cubed
  • Salt And Pepper -- to taste
  • 1 Medium Green Chile -- crushed
  • 2 Cloves Garlic
  • 1 Teaspoon Curry Powder
  • 2 Pounds Beans -- precooked
  • Lemon Juice -- to taste
Directions in large stewpot, brown onion, then add meat , salt and pepper and brown. continue to cook for 20 minutes. grind chile and garlic together in mortar and pistle, add this and curry to pot. Simmer until meat is tender. add beans about 15 minutes before serving. transfer to serving dish and drizzle with lemon juice.
