South African   -   Frikkadels (South Africa)   adapted from Traditional African Cooking

  • 2 Pounds Ground Beef
  • 1/2 Cup Rye Bread Crumbs
  • 1 Small Onion -- chopped
  • 2 Medium Eggs
  • 1/4 Teaspoon Nutmeg
  • 1 Teaspoon Coriander -- ground
  • Salt And Pepper -- to taste
  • 1/4 Cup Olive Oil
  • 1 Can Beef Stock
  • 1 Tablespoon Flour
  • 1 Tablespoon Cold Water
Directions combine, meat, bread, onions, eggs, nutmeg, coriander, salt and pepper in bowl. make 12 meat patties from mixture. saute meat in olive oil until browned through. drain grease and add broth. bring to boil. simmer for 30 minutes. remove patties from broth and keep warm. add flour and cold water to broth and stir until thickened.
