South African - Garlic Zucchini Soup

Ingredients

- 2 Medium Shallots -- Chopped
- 4 Cloves Garlic -- Finely Chopped
- 2 Medium Leeks -- Sliced
- 2 Medium Onion -- Chopped
- 2 Tablespoons Butter
- 2 1/4 Pounds Zucchini -- Thinly Sliced
- 8 Cups Boiling Water
- 4 Cubes Bouillon
- 1 Teaspoon Pepper
- 4 Medium Red Potatoes -- Peeled And Sliced
- 8 Ounces Sour Cream -- Optional
- 3 Tablespoons Green Onion -- Chopped
- Salt -- To Taste

Directions
|
Saute shallots, garlic, leeks and onions in butter in large pot until tender. Add zucchini, water, bouillon, pepper and potatoes. Bring to a boil. Cover, reduce heat and simmer for 30 minutes. Season with salt. Add half of mixture to food processor or blender and process until smooth. Top with sour cream and green onions.
