South African   -   Garlic Zucchini Soup   adapted from South African Gourmet Food and Wine by Rosen & Loon

Ingredients
  • 2 Medium Shallots -- Chopped
  • 4 Cloves Garlic -- Finely Chopped
  • 2 Medium Leeks -- Sliced
  • 2 Medium Onion -- Chopped
  • 2 Tablespoons Butter
  • 2 1/4 Pounds Zucchini -- Thinly Sliced
  • 8 Cups Boiling Water
  • 4 Cubes Bouillon
  • 1 Teaspoon Pepper
  • 4 Medium Red Potatoes -- Peeled And Sliced
  • 8 Ounces Sour Cream -- Optional
  • 3 Tablespoons Green Onion -- Chopped
  • Salt -- To Taste
Directions Saute shallots, garlic, leeks and onions in butter in large pot until tender. Add zucchini, water, bouillon, pepper and potatoes. Bring to a boil. Cover, reduce heat and simmer for 30 minutes. Season with salt. Add half of mixture to food processor or blender and process until smooth. Top with sour cream and green onions.
