South African   -   Green Bean Bredie (South Africa)   adapted from The African Cookbook by Bea Sandler

  • 1 Large Onion -- Chopped
  • 2 Tablespoons Butter
  • 2 Pounds Lamb -- Chopped
  • 2 Cups Beef Broth
  • 2 Teaspoons Salt
  • 1/4 Teaspoon Pepper
  • 1 Teaspoon Crushed Red Pepper
  • 2 Tablespoons Sugar
  • 32 Ounces French-Style Green Beans
  • 4 Medium Potatoes -- Sliced
  • Salt And Pepper -- To Taste
  • 1 Tablespoon Paprika
Directions Saute onion in butter until browned. Add lamb and saute until browned. Add broth, salt, pepper, red pepper and sugar. Simmer for 30 minutes. Add green beans, potatoes, salt, pepper and paprika. Simmer for 20 minutes. Add water as necessary. Serve with rice.
Serves 4
