South African   -   Orzo With Stir Fry Veggies And Herbs   adapted from South African Gourmet Food and Wine by Rosen & Loon

Ingredients
  • 1 1/2 Cups Orzo -- Cooked
  • 1/3 Cup Roasted Garlic Oil
  • 1 Large Onion -- Sliced
  • 8 Ounces Mushroom -- Sliced
  • 6 Cloves Garlic -- Finely Chopped
  • 1 Medium Red Pepper -- Chopped
  • 1 Medium Yellow Pepper -- Chopped
  • 1 Medium Zucchini -- Chopped
  • 1 Medium Carrot -- Julienned
  • 8 Medium Asparagus -- Chopped
  • 1 Head Broccoli -- Chopped
  • 1 Cup Peas
  • 1 Tablespoon Italian Seasoning
  • Salt And Pepper -- To Taste
  • Garlic Powder -- To Taste
Directions Heat garlic oil and saute onion until soft. Add mushrooms and cook for 5 minutes. Add garlic,herbs and remaining vegetables. Saute for 4 minutes. Season with salt, pepper and garlic powder. Toss with orzo and serve.
