South African   -   Pumpkin Fritters   adapted from A Taste of South Africa by Magdaleen van Wyk

  • 1 Can Pumpkin
  • 1 Medium Egg -- beaten
  • 2 Tablespoons Flour
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon salt
  • Butter -- For Frying
  • Cinnamon And Sugar -- For Sprinkling
Directions combine all ingredients, except for butter and sugar, heat butter in frying pan and drop in spoonfulls of butter mixuture, saute until golden on both sides, sprinkle with cinnamon and sugar and serve.
