South African   -   South African Coconut And Lemon Bread   adapted from Ethnic Breads

  • 3/4 Cup Flaked Coconut
  • 2 1/4 Teaspoons Active Dry Yeast
  • 3 Cups Bread Flour
  • 3 Tablespoons Sugar
  • 1 1/4 Teaspoons Salt
  • 1 1/2 Tablespoons Vegetable Oil
  • 3 Tablespoons Candied Lemon Zest
  • 1 1/4 Cups Water
Directions Preheat the oven to 350 degrees. Spread coconut on baking sheet and bake for 10 minutes or until lightly brown. Remove and let cool. Add all ingredients to bread machine in order recommended by manual. Process on bread cycle.
Serves 1
