South African   -   Spicy Lamb Curry   adapted from A Taste of South Africa by Magdaleen van Wyk

Ingredients
  • 2 Medium Onions -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Medium Bay Leaf
  • 1/2 Teaspoon Ground Cinnamon
  • 1 Teaspoon Coriander
  • 1 Teaspoon Cumin
  • 3 Cloves Garlic -- Chopped
  • 4 Teaspoons Curry Powder
  • 2 Tablespoons Flour
  • 1 Tablespoon Tumeric
  • 2 Pounds Lamb -- Cubed
  • 1 Can Tomatoes -- Chopped
  • 6 Teaspoons Apricot Chutney -- Optional
  • 1 Cup Beef Broth
  • 1 Teaspoon Sugar
  • Salt And Pepper -- To Taste
Directions saute onions in oil, add all spices garlic and flour and saute for 3 minutes. add meat, and brown for 5 minutes. add remaining ingredients and mix well. cover and simmer for 1 hour. serve over rice, cous cous or noodles.
