South African   -   Springbok Potjiekos   adapted from A Taste of South Africa by Magdaleen van Wyk

  • 3 Tablespoons Olive Oil
  • 4 Medium Carrots -- Sliced
  • 2 Medium Onions -- Sliced
  • 3 Cloves Garlic -- Chopped
  • 1 Teaspoon Thyme
  • Salt And Pepper -- To Taste
  • 2 Pounds Venison -- Cubed
  • 4 Slices Bacon -- Chopped
  • 1/2 Cup Dry Red Wine
  • 6 Medium Potatoes -- Sliced
Directions Heat oil in pan and saute carrots, onions and garlic for 10 minutes. Add thyme, salt and pepper, meat, bacon and wine. Cover and simmer for 3 hours. Add potatoes and simmer for 30 minutes. Serve with rice or pasta.
