Spanish   -   Artichokes With Ham   adapted from The Complete Spanish Cookbook

  • 1/4 Cup White Vinegar
  • 2 Cans Artichoke Hearts -- chopped
  • 8 Ounces Smoked Ham -- shrdd
  • 3 Tablespoons Olive Oil
  • 1 Large Onion -- finely chopped
  • 2 Cloves Garlic
  • 3 Large Tomatoes -- chopped
  • 2 Sprigs Fresh Thyme
  • 1/2 Cup Dry White Wine
  • 1 Cup Chicken Stock
  • Salt And Pepper -- to taste
Directions Saute ham in oil for 3 minutes, add onion, saute until soft. Add garlic, tomatoes, thyme, wine, stock and vinegar, bring to boil. Add artichokes, reduce simmer uncovered 20 minutes. Season with salt and pepper and serve.
Serves 4
