Spanish   -   Basque Soup   adapted from Winter Harvest Cookbook by Lane Morgan

  • 1/4 Cup Olive Oil
  • 1 Medium Onion -- Finely Chopped
  • 1 Medium Winter Squash Or Pumpkin -- Cubed
  • 1 Medium Cabbage -- Sliced
  • 1/2 Pound Navy Beans -- Soaked And Drained
  • 2 Cloves Garlic -- Sliced
  • 2 Quarts Chicken Stock
  • Salt And Pepper -- To Taste
Directions Heat olive oil and saute onion until well browned. Add squash, cabbage, beans and garlic. Saute for 1 minute. Add stock, salt and pepper. Lover heat and cook until the beans are tender about 1 hour. Serve.
Serves 6
