Spanish - Basque Soup

Ingredients
|
- 1/4 Cup Olive Oil
- 1 Medium Onion -- Finely Chopped
- 1 Medium Winter Squash Or Pumpkin -- Cubed
- 1 Medium Cabbage -- Sliced
- 1/2 Pound Navy Beans -- Soaked And Drained
- 2 Cloves Garlic -- Sliced
- 2 Quarts Chicken Stock
- Salt And Pepper -- To Taste

Directions

Heat olive oil and saute onion until well browned. Add squash, cabbage, beans and garlic. Saute for 1 minute. Add stock, salt and pepper. Lover heat and cook until the beans are tender about 1 hour. Serve.
