Spanish   -   Catalan Chicory Salad   adapted from The Complete Spanish Cookbook

  • 3 Heads Chicory Greens -- rinsed & dried
  • 4 Cloves Garlic -- chopped
  • 2 Medium Red Chiles
  • 12 Medium Almonds -- toasted
  • 1/4 Cup Olive Oil
  • 3 Tablespoons White Wine Vinegar
  • 1/2 Teaspoon Sugar
  • Salt And Pepper -- to taste
Directions Put everything but chicory in food processor and create dressing. Toss with torn greens and serve.
