Spanish   -   Chicken Spanish Style   adapted from Food of Spain and Portugal

  • 3 Pounds Chicken
  • Salt And Pepper -- to taste
  • Flour
  • Olive Oil
  • 1 Medium Onion -- chopped
  • 1/2 Cup Prosciutto -- chopped
  • 1 Clove Garlic -- chopped
  • 2 Tablespoons Parsley
  • 2 Teaspoons Basil
  • 1 Bay Leaf
  • 1/2 Cup White Wine
  • 1/2 Cup Chicken Stock
Directions Season chicken with salt & pepper, dredge in flour and fry until golden on both sides. Remove to another pan. IN leftover oil saute ham, onion and garlic.
IN chicken pan, add parsley, basil, bay leaf, wine and stock. cover and cook 35-40 minutes until chicken is cooked thoroughly.
Combine the 2 and serve.
