Spanish   -   Cochifrito De Cordero   adapted from The Complete Spanish Cookbook

  • 1 1/2 Pounds Lamb -- or beef
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- chopped
  • 3 Cloves Garlic -- finely chopped
  • 3/4 Teaspoon Sweet Paprika
  • 1 Tablespoon Lemon Juice
  • Salt And Pepper -- to taste
  • 2 Teaspoons Parsley -- chopped
Directions Saute lamb in hot oil until well browned. Remove and keep warm. Saute onion until golden brown. Add garlic and paprika. Saute for 1 minute. Return meat and lemon juice to the pot. Cook stirring continously for 6 minutes or until meat is cooked. Season with salt, pepper and parsley. Serve.
