Spanish - Cocido Madrileno (Madrid Chicken And Vegetable Hotpot)

Ingredients

- 1 Cup Chickpeas -- Cooked
- 3 Pounds Chicken -- Cubed
- 1/2 Pound Beef -- Cubed
- 10 Cups Chicken Stock
- 1/4 Pound Bacon -- Chopped
- 1/2 Pound Serrano Ham -- Cubed
- 2 Medium Leek -- Chopped
- 3 Medium Carrot -- Chopped
- 1 Large Onion -- Chopped
- 2 Small Turnips -- Chopped
- 1 Clove Garlic -- Chopped
- 1 Medium Bay Leaf
- 3 Tablespoons Parsley -- Chopped
- 1/2 Teaspoon Thyme
- 1/2 Teaspoon Pepper
- 6 Medium Chorizo Link -- Sliced
- 1 Small Cabbage -- Shredded
- 6 Medium New Potatoes -- Sliced
- 1 Teaspoon Red Pepper Flakes

Directions
|
Combine chicken, beef, bacon, ham, leeks, carrots, onion, turnip, garlic, bay leaf, parsley, thyme and pepper with stock. Simmer for 40 minutes. In a skillet, brown the chorizo for about 5 minutes. Add cabbage and 1 cup water. Simmer for 10 minutes. Add the cabbage mixture along with potatoes, chickpeas and red pepper to the soup and simmer for 25 minutes. Serve.
