Spanish   -   Croquetas De Jamon York   adapted from The Complete Spanish Cookbook

  • 1/2 Pound Cooked Ham
  • 3 Ounces Bacon -- serrano jamon
  • 1/2 Teaspoon Black Pepper
  • 2 Medium Hard-Boiled Egg -- chopped
  • 2 Tablespoons Parsley -- chopped
  • 1 Medium Egg
  • Flour
  • 3 Cups Olive Oil
Directions Cut both types of ham into cubes and chop in food processor. Add pepper and hard boiled eggs and chop until smooth. Add parsley and egg and blend in. Fold in enough flour to make a smooth paste, then from into small balls and coat with more flour. Fry in moderately hot oil until golden brown. Remove, drain well and serve hot with toothpicks.
Serves 4
