Spanish   -   Curried Prawns   adapted from Food of Spain and Portugal

  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 1 Large Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 1 Red Bell Pepper -- chopped
  • 1 Teaspoon Curry Powder
  • Salt And Pepper -- to taste
  • 2 Tablespoons Flour
  • 1/2 Cup Fish Stock
  • 1/2 Cup Milk
  • 1 Pound Shrimp
  • Lemon Juice
  • 1 Cup Cooked Rice
Directions Saute onions, pepper & garlic until soft. ASdd curry, salt, pepper, floru and mix well. Stir in stock and milk and cook 4-5 minutes until mixture is smooth and well blended. Add shrimp, folding into the sauce. Cook for 3 minutes. Stir in generous squeeze of lemon juice. Serve ove rice.
