Spanish   -   Dilistak Xingarrekin (Lentils With Bacon)   adapted from The Basque Kitchen by Gerald Hirigoyen

  • 6 Ounces Bacon -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Small Onion -- Chopped
  • 6 Cloves Garlic -- Chopped
  • 3 Cups Lentils
  • 1/2 Teaspoon Thyme
  • 1/4 Cup Parsley -- Chopped
  • 5 Cups Chicken Stock
  • Salt And Pepper -- To Taste
  • 5 Tablespoons Butter
  • 2 Tablespoons Balsamic Vinegar
Directions Saute bacon in oil for 1 minute. Add onion and garlic. Saute for 5 minutes. Add lentils, thyme, parsley, broth, salt and pepper. Bring to a boil, reduce heat and simmer for 25 minutes. Add butter and vinegar. Allow butter to melt and serve.
Serves 4
