Spanish   -   Empanada De Cerdo Y Pimientos (Pork And Green Pepper Pie)   adapted from Tapas by Penelope Casas

  • 4 Teaspoons Paprika
  • 8 Tablespoons Olive Oil
  • 1 Tablespoon Parsley -- Chopped
  • 1 Clove Garlic -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Pound Pork -- Cubed
  • 1 Large Bell Pepper -- Chopped
  • 2 Medium Onion -- Chopped
  • 2 Tablespoons White Wine
  • 1 Loaf Bread Dough
  • 1 Medium Egg -- Beaten With
  • 1 Teaspoon Water
Directions Combine paprika, half the oil, parsley, garlic and salt. Add meat and marinate overnight. Saute bell peppers in oil for 5 minutes. Add 2 tablespoons of water, cover and simmer for 15 minutes. Add onions and saute until browned. Add meat and saute until well browned. Add wine and simmer until it evaporates. Remove from heat and cool. Roll out dough to a 1/2 inch thickeness. Cut out 14 inch circles. Divide pork mixture into the center of each circle. Fold over and seal the edges. Make several slits in the top of the dough. Brush with egg/water mixture and bake in 350 degree oven for 30 minutes. Cool slightly and serve.
