Spanish   -   Emparedados De Jamon Y Esparragos   adapted from The Complete Spanish Cookbook

  • 8 Stalks Green Asparagus
  • 8 Slices Smoked Cooked Ham
  • Salt And Pepper
  • 2 Large Eggs -- beaten
  • 1 Cup Bread Crumbs
  • 1 Cup Olive Oil
Directions Place an asparagus stalk in the center of slice of ham and roll up. Secure with toothpicks and season with salt and pepper. Deip into the egg and coat the crumbs. Fry in hot oil until crumbs are golden Serve at once.
