Spanish   -   Esparragos Gratin Ados   adapted from The Complete Spanish Cookbook

  • 24 Spears Asparagus
  • 3/4 Cup Bread Crumbs
  • 1/4 Cup Olive Oil
  • 3 Cloves Garlic -- finely chopped
  • 2 Teaspoons Paprika
  • Salt And Pepper -- to taste
  • 1 Tablespoon Red Wine Vinegar
Directions Trim aspargus and simmer in lighlty salted water until tender, about 5 minutes.j Fry in oil, garlic, paprika, salt and pepper until garlic is godlen. Arrange aspargaus in gratin dish. Cover with garlic mixture splash with vinegar, and sprinkle on bread crumbs. Place under hot broiler to toast crumbs, then serve.
