Ingredients
  • 1 Pound Beef -- cubed
  • 1/2 Cup Olive Oil
  • 1 Large Onion -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 1 Medium Carrot -- diced
  • 2 Ounces Bacon -- diced
  • 1 Cup Dry White Wine
  • 3 Tablespoons Sherry
  • 2 Inch Cinnamon Stick
  • 1 Medium Bay Leaf
  • 1 Sprig Thyme
  • 1 Sprig Parsley
  • 1 Sprig Sage
  • 1 Teaspoon Paprika
  • 12 Small New Potatoes -- peeled
  • 12 Small Turnip -- peeled
  • 12 Small Onion -- peeled
  • Salt And Pepper -- to taste
Directions Saute beef in oil until well browned. Remove and keep warm. Fry onion until well colored. Add garlic, bacon, and carrot, fry for 2 minutes. Add wine and brandy and cook over high heat until reduced by half. Return the meat and add the spices and herbs. Add 1 1/2 cups warm water and bring to a boil. Cover and cook for 1 1/2 hours. Add vegetables and season with salt and pepper. Cook another 15 minutes or until tender. Boil rapidly if stew is too watery to reduce liquid.
