Ingredients
  • 3 Tablespoons Olive Oil
  • 2 Medium Onion -- Sliced
  • 6 Cloves Garlic -- Chopped
  • 1 Medium Dried Chile -- Crushed
  • 1 Tablespoon Coriander Seed
  • 2 Medium Bay Leaf
  • 3 Cups Chickpeas
  • 6 Cups Chicken Broth
  • 1/2 Teaspoon Saffron
  • 1 Tablespoon Salt
  • 1/2 Teaspoon Pepper
Directions Saute onion, garlic, chile, coriander and bay leaves for 5 minutes. Add chickpeas, stock, saffron, salt and pepper. Bring to a boil. Transfer to a ovenproof dish and bake for 45 minutes at 450 degrees. Serve.
