Spanish   -   Garbanzos A La Catalana   adapted from Mediterranean Cooking

  • 1 1/2 Cups Dried Chickpeas -- soaked overnight
  • Salt -- to taste
  • 1/2 Pound Sausage -- chopped
  • 5 Ounces Bacon -- chopped
  • Oil
  • 1 Medium Onion -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 1 Small Bell Pepper -- finely chopped
  • 4 Large Tomatoes -- finely chopped
  • Cinnamon -- to taste
  • 1/4 Teaspoon Thyme
  • Pepper -- to taste
Directions Drain beans, rinse well and simmer in salted water, covered for 1 hour. Meanwhile saute bacon and sausage until done. Remove bacon and sausage. Set aside. To the bacon oil, if there is not enough oil add enough to make about 2 tablespoons. Saute onion, garlic and bell pepper for 5 minutes. Add tomatoes cinnamon, thyme, salt and pepper. Cook covered fro 10 minutes. Add sausage and bacon. Drain chickpeas, reserving 2 cups liquid. Put chickpeas in a 13 inch baking dish. Spoon in tomato sauce. Moisten with cooking liquid. Season with salt and pepper. Cover the dish and bake in oven for 1 1/2 hours. Serve.
