Spanish   -   Gaxucharen Errixa (Ladies Rice)   adapted from The Basque Kitchen by Gerald Hirigoyen

  • 1 Medium Onion -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Medium Anaheim Chili Pepper -- Chopped
  • 1/2 Pound Chorizo -- Sliced
  • 3 Tablespoons Olive Oil
  • 2 Cups Rice
  • 4 Cups Chicken Broth
  • Salt And Pepper -- To Taste
  • 1 Teaspoon Paprika
Directions Saute onion, bell pepper, anaheim pepper and chorizo in oil until onion is well browned. Place in baking dish. Add rice and broth. Stir well. Bake at 450 degrees for 25 minutes. Season with salt and pepper. Sprinkle with paprika and serve.
