Spanish   -   Guisantes A La Murciana   adapted from The Complete Spanish Cookbook

  • 1 Small Onion -- finely chopped
  • 1 Large Carrot -- diced
  • 5 Ounces Smoked Ham -- diced
  • 2 Tablespoons Olive Oil
  • 3 Cups Peas
  • 6 Large Spinach Leaves -- shredded
  • 1/2 Teaspoon Sugar
  • Salt And Pepper -- to taste
Directions Saute onion, carrot, and ham in olive oil for 6 minutes. Add peas and cook for 2 minutes stirring constantly. Add spinach, sugar, salt and pepper. Cover and cook over low heat for 15 minutes. Serve.
Serves 6
