Spanish - Ham And Tomato Sauce

Ingredients
|
- 12 Ounces Prosciutto -- cubed
- 1 Medium Onion -- finely chopped
- 1/2 Cup Olive Oil
- 3 Cloves Garlic -- finely chopped
- 4 Large Tomatoes -- chopped
- 12 Ounces Canned Tomatoes -- chopped
- Salt And Pepper -- to taste
- 1 Teaspoon Sugar
- 1/2 Teaspoon Cumin
- 1 Tablespoon Wine Vinegar
- 1/4 Cup All-Purpose Flour

Directions
|
Saute onion in half of the olive oil. Add garlic, saute briefly. Add tomatoes saute 6 minutes. Add canned tomatoes, salt, pepper, sugar, and cumin. Cook uncovered until soft and pulpy. Push the sauce through a sieve, then season with vinegar. Toss ham in flour. Fry in remaining oil for 4 minutes. Add sauce and heat gently for 10 minutes.
