Spanish   -   Ham And Tomato Sauce   adapted from The Complete Spanish Cookbook

  • 12 Ounces Prosciutto -- cubed
  • 1 Medium Onion -- finely chopped
  • 1/2 Cup Olive Oil
  • 3 Cloves Garlic -- finely chopped
  • 4 Large Tomatoes -- chopped
  • 12 Ounces Canned Tomatoes -- chopped
  • Salt And Pepper -- to taste
  • 1 Teaspoon Sugar
  • 1/2 Teaspoon Cumin
  • 1 Tablespoon Wine Vinegar
  • 1/4 Cup All-Purpose Flour
Directions Saute onion in half of the olive oil. Add garlic, saute briefly. Add tomatoes saute 6 minutes. Add canned tomatoes, salt, pepper, sugar, and cumin. Cook uncovered until soft and pulpy. Push the sauce through a sieve, then season with vinegar. Toss ham in flour. Fry in remaining oil for 4 minutes. Add sauce and heat gently for 10 minutes.
